aquafaba chocolate coffee mousse


  • 150ml chickpea juice
  • 20g sugar
  • 150g baking chocolate
  • 1 tsp coffee powder

Serves: 6 mousses

For: gluten free, lactose free, dairy free, egg free, vegan


  1. Whisk the chickpea water (that you'll find in a can of chickpeas).
  2. When the mixture becomes frothy, drizzle in a little sugar to tighten the mixture. 
  3. Melt the dark chocolate in a double boiler with the coffee powder.
  4. Add to the juice of the chickpeas.
  5. Divide between 6 ramekins and chill for at least 4 hours.
