cauliflower gratin

  • medium head cauliflower 
  • 30g of margarine
  • 2 tsp of flour
  • 50 cl of vegan milk
  • 20cl of rice cuisine
  • nussmesan vegan cheese
  • nutmeg
  • salt and pepper

Serves: 2 people

For: lactose free, dairy free, egg free, vegan


  1. Preheat oven to 190ºC.
  2. Melt the margarine in a sauce pan then add the flour and whisk.
  3. Pour the rice cuisine and whisk to incorporate. Cook for 1 minute.
  4. Pour in the milk a little at a time, whisking constantly to incorporate. Go slowly to prevent clumps from forming. Simmer for a few minutes or until thickened, whisking frequently.
  5. Add the nutmeg, salt, and pepper. Taste and adjust seasonings as needed and set aside.
  6. Cut cauliflower into small florets and put them into an oven plate.
  7. Pour the sauce over to coat.
  8. Sprinkle the top with the nussmesan cheese and bake uncovered for 20 minutes, until the top is golden brown and crisp.
